Since its opening in 1983, Jinling Hotel Nanjing has been home to distinguished guests from all over the world, and at the same time, it is known for its fine food. In the past 23 years, Jinling has set precedence for employing people on their merits and abilities. Large groups of chefs have been trained to become skillful and inventive artisans. They have developed a series of distinctive Jinling specialties, making Jinling synonymous to fine dining. 
  
In order to become a great cook, one must first cook with passion.  Sun often told himself and culinary staff working in Jinling Hotel that cooking is an art.  He believes that one must be committed to elevate cooking from a menial task to the status of being an art.  In 2006 Sun became the only chef awarded the Model Worker in Jiangsu Province.  He attributed much of his success to this belief and practice. 
 
Jinling Hotel Nanjing is the first five-star hotel in Jiangsu Province. Having worked here for more than 20 years, Sun and his colleagues served hundreds of high-ranking officials and CEOs.  Their work has won acclaim from guests and gourmets both here and abroad.
 
The pinnacle of fine dining derives from combining selected ingredients with meticulous preparation. Dedicated to the pursuit of his skill, Sun often seeks sources for new inspiration. Green, healthy, and nutritious foods are always favored and they will never go out of style. Staying true to this concept he has created culinary wonders, one after another with imagination, style and continued ingenuity.
 
Since 2003, Sun has orchestrated many culinary contests in Jinling Hotel Nanjing.  More than 120 new dishes have been created.  He continuously adds many new dishes to Jinling's cuisine. New dishes such as crispy eel, steamed shellfish with bean curd, sautéed pucai with salted pork and goose, and fried balls of spiral seaweed proved to be quite successful.
 
During their historical visit to Nanjing in 2005, Lien Chan, KMT chairman, and James Soong, leader of Taiwan's People First Party (PFP), stayed in Jinling Hotel Nanjing.  Several weeks prior to their arrival, Sun and his colleagues prepared special menus featuring traditional Jinling cuisine perfectly tailored to their special tastes.  These two menus greatly impressed Taiwanese guests and also became famous throughout China, increasing fame and popularity of Jinling cuisine and Sun as their executive chef.
